Information about micro-organisms on food

These are sometimes called bacteria, bugs or germs. They are everywhere. Most bacteria grow best in warm temperatures, they like moist conditions and need time to grow. Bacteria especially like meats, seafood, poultry, eggs, milk, cream, sauces, gravys, cooked meats and reheated foods.

Most raw foods contain bacteria so it is especially important to cook food properly and prevent cross contamination between raw and cooked foods.

How do harmful bacteria get into food?

Food touches things (e.g. cutting boards, knives) which have bacteria on them.

People touch and sneeze onto food.

People do not wash their hands before touching food, especially after going to the toilet or smoking.

Insects or animals may touch food. Keep food covered and always wash your hands after touching your pets.

 

What is food poisoning?

This is the name given to illness caused by eating food which has harmful micro-organisms or their toxins in it. It may include vomiting and/or diarrhoea, stomach pains, headaches and fever.

What to do if you have food poisoning

Take special care to drink plenty of water so that you do not become dehydrated. The elderly and very young are especially at risk.

Contact your doctor if the symptoms are severe or last for several days.

Wash your hands with soap and hot water for at least 20 seconds and dry on a clean dry towel for at least 20 seconds before touching food.
