IT'S A HOTY! ... CHRISTCHURCH KNOWS ITS 100% NZ HAM CUISINE

For 2011, the Courier Sharpening Ltd 100% New Zealand Ham of the Year has been awarded to Kurt Robinson and his team (Noel Marquet and Nick Warnes) of Cashmere Cuisine for their Gold winning Honey Cured Manuka Smoked Leg Ham - described by judges as "an astounding example of how to prepare this traditional cut of meat, while delivering a superb balance of sweetness, salt and smoke taste."

Other medal winners: Harrington's Small Goods Ltd, Murchison Meats and Ashby's Butchery for Sliced Ham, and Redcliff's Butchery and Butcher Jacks Ltd for Leg of Ham.

The inaugural 100% New Zealand Ham Competition was held on Friday 29 July at 107 Bistro (WelTEC, Petone) and saw 86 hams from 51 businesses nationwide being judged in two categories - bone-in-ham and boneless ham - utilising criteria based on taste, aroma, texture and appearance to find the winning 100% New Zealand hams.  Judged by a team of 10 acclaimed food writers, chefs and meat industry experts headed by Anita Sarginson (President of the National Chef's Association, and renowned chef), the competition celebrates the best-of-the-best New Zealand ham, made from 100% NZ pork, PigCare Accredited.

SHAKE, RATTLE & ROLL ... CHRISTCHURCH BACON'S ROCK NZ

Friday 29 July 2011 was judgement day for 152 bacons and 85 hams entered in The 100% New Zealand Bacon + Ham Competition.

This year presented a coup for Christchurch - the Supreme 100% NZ Bacon of the Year award going to Peter and his team at Ashby's Butchery with their Dry Cured Middle Bacon!

But there's more... all the Gold medals also went the way of Christchurch for each of the 100% NZ Bacon categories - Middle, Dry Cured Middle, Shoulder, Streaky and Middle Eye!

The Silver and Bronze medals were won in the regions of Murchison, Te Awamutu, Wellington, Auckland and Christchurch.

The 32-strong eminent panel of judges which included Anita Sarginson, National President of NZ Chef's Association, David Burton, restaurant critic, food writers Jan Bilton and Graham Hawkes, and Rodney Hide had an enormous task in distinguishing the superior quality and taste of 100% NZ Bacon and 100% NZ Ham on the day.  Each entry was accessed based on criteria such as taste, aroma, texture and appearance within each bacon and ham category and ultimately the Supreme Bacon of the Year and Supreme Ham of the Year.
