Pork Marinades

Ingredients

Oregano and Lemon

  • 1/2 cup lemon juice
  • 1 tbsp oil
  • 2 tsp dried oregano
  • 1 tsp rosemary sprigs
  • 1 clove garlic, crushed
  • Freshly ground black pepper

Mix all ingredients together.

 

Coriander

  • 2 cloves garlic, crushed
  • 2 tsp ground coriander
  • 1 tbsp cracked black pepper
  • 2 tbsp brown sugar
  • 2 tbsp lemon juice
  • 1/4 cup soy sauce

Mix all ingredients together.

 

Satay

  • 1 large onion
  • 1 clove garlic
  • 2 tbsp each crunchy peanut butter, lemon juice and soy sauce
  • 1 tbsp each brown sugar and oil
  • 1/2 tsp chilli sauce

Place all ingredients in a food processor and process until smooth.

 

Oriental

  • 1/2 cup soy sauce
  • 1 tbsp sherry
  • 1 clove garlic, crushed
  • 1 tsp grated fresh ginger
  • 2 tsp five spice powder
  • 2 tbsp oil

Mix all ingredients together.

Marinades are typically a combination of oil with an acidic ingredient e.g. wine, vinegar, soy sauce, orange juice and herbs or other flavourings.

Marinades tenderise and flavour meat; and work best when refrigerated for 2-24 hours.  Leaner cuts of pork such as thinner cut chops, leg cuts, fillet/tenderloin may benefit from using a marinade.
