How To Cook Perfect Pork

Did you know that pork is a red meat?  This means that it's best to rest once cooked and it's perfectly OK with a hint of pink - just like beef and lamb.  In fact cooking it this way means your pork will remain succulent and tender - Perfect!.

PORK STEAKS = 3 + 3 + 3
1. Preheat pan to medium heat.
2. Rub steak with oil and season with salt and pepper.
3. Fry each side for 3 minutes, turning only once.
4. Remove from pan and rest for 3 minutes.


PORK CHOPS

1. Rub the chops with olive oil and season with salt & pepper.
2. Preheat a heavy-based fry pan, add the pork chops, cooking for 5 minutes on each side.
3. Place on a plate, rest for 3 minutes.


PORKBALLS
1. Pork mince binds to itself, so it's great for meat balls.
2. Preheat pan to high for 1 minute.
3. Add a splash of oil once the pan has heated.
4. Add porkballs and stir fry until they change colour.


STIR-FRY
1. Preheat pan or wok on high heat
2. Splash pan with oil after it has heated.
3. Sear pork for 3 minutes.
4. Remove and rest while stir frying veges.


FILLET
1. Preheat the oven to 180°C, baste the fillet with olive oil and season with salt & pepper.
2. Heat a heavy-based fry pan and sear the fillet for 2 minutes on each side.
3. Place in a roasting dish and roast 8-10 minutes.
4. Rest for 3 minutes then carve across the grain and serve.


PORK ROAST
1. Preheat oven to 150°C.
2. Wipe the skin dry and then rub with olive oil and salt, massaging into the scored skin.
3. Roast for 1 1/2 hours per kg.
4. Remove from oven, cover and allow to rest for 10 minutes before carving across the grain.
