Method

  1. Chop the bacon and fry until crisp. Remove from the pan.
  2. Add the oil and onions to the pan and cook until the onion is lightly browned.
  3. Add the quartered potatoes to the onion and water to cover. Season with the lemon pepper.
  4. Cover and simmer for about 15 minutes or until the potatoes are just tender.
  5. Add the frozen beans and cook until just tender.
  6. Mix the cornflour in water and pour over the vegetables to coat and glaze.
  7. Cook for 2-3 minutes.
  8. Place in a serving dish and sprinkle with the bacon.

To serve

Serve in a bowl with a slice of crusty bread alongside.

Ingredients

  • 200 grams bacon
  • 2 tablespoons oil
  • 2 onions, chopped
  • 500 grams potatoes, quartered
  • 2 teaspoons lemon pepper
  • 150 grams frozen green beans
  • 2 teaspoons cornflour
  • 1 tablespoon water
