Method

  1. Preheat oven to 150°C.
  2. Grind together the coriander seeds and sea salt and rub into the scored skin and underside of the pork belly.
  3. Place in a baking tray, skin side up, with the ginger and orange juice.
  4. Cover tightly with a sheet of foil and bake at 150°C for 3 hours.
  5. Strain the juices into a saucepan and simmer gently to thicken.
  6. Meanwhile increase the oven temperature to 180°C, place orange slices alongside the pork and roast the belly until top crackles and browns.
  7. Allow to rest 10 minutes.

To serve

  1. Slice and serve with the orange segments, new potatoes and a green salad.
  2. Pour over the orange sauce or serve alongside.

Tips/Hints

  • Tightly roll the belly into a roulade shape after seasoning and secure with string. Cook for 1.5 hours and turn. After cooking slowly for 3 hours, cut into 3 cm thick slices before browning on the high temperature.
  • Roasted pumpkin goes well with belly pork.

Ingredients

  • 1.5kg belly pork piece, well scored
  • 1 tablespoon coriander seeds
  • 1 tablespoon coarse sea salt
  • 3 cm root ginger, peeled and sliced
  • 2 cups orange juice
  • 1 orange, cut into slices
