This is a great dish on its own, for lunch, a starter or the ultimate, served with Roast Pork.

Method

  1. Preheat oven to 175°C.
  2. Peel the onions and slice a piece off bottom to allow sitting flat on lined baking dish.
  3. Remove core of onion around 2-3 layers / 1cm surround.
  4. Finely dice the removed based and core of onion.
  5. Heat oil in fry pan and stir fry diced onion and garlic.
  6. Stir in rosemary, breadcrumbs and feta.
  7. Fill onions with this mixture and secure a rasher of streaky bacon around the edge.
  8. Bake 35-45 minutes until bacon crispy.

Hints/Tips

  • Try adding chopped field mushrooms to filling mixture
  • 1 tablespoon pine nuts sprinkled on top before baking looks good and tastes great
  • Garnish with a sprig of rosemary

Ingredients

  • 4 medium-sized red onions
  • 2 cloves garlic, peeled and finely chopped
  • 1 tablespoon canola oil
  • 2 tablespoons chopped fresh rosemary sprigs
  • 1/2 cup fresh bread crumbs
  • 1/2 cup crumbled feta cheese
  • 4 rashers (200g) streaky bacon
