Method

  1. Preheat oven to 170°C.
  2. Heat a heavy based pan, add fillets and brown on all sides.
  3. Place the pork in a casserole.
  4. Add the onion and marsala, deglaze pan and simmer 3-4 minutes.
  5. Pour marsala mixture over pork.
  6. Cover and place in oven.
  7. Cook until the pork is cooked, the juices run clear when the centre is pierced with a knife - about 20 minutes.
