Method

  1. Preheat the oven to 180°C.
  2. Lightly grease a shallow baking pan and line base and sides with bacon rashers.
  3. Combine onion, cabbage, chopped bacon, parsley and pepper.
  4. Beat eggs and milk and blend in the flour.
  5. Stir egg mixture into the vegetables and pour into the bacon-lined pan.
  6. Bake in preheated oven for 45 minutes or until set and golden brown.
  7. Cut into squares to serve.

Ingredients

  • 125 g bacon rashers, rind and fat removed
  • 1 onion, finely chopped
  • 2 cups finely sliced cabbage
  • 1 rasher bacon, rind removed and chopped
  • 1/2 tablespoon chopped fresh parsley
  • freshly ground black pepper, to taste
  • 2 eggs
  • 250 ml milk
  • 1/4 cup flour
