Method

  1. Place the ham bone, bay leaves, garlic, onion, cloves and peppercorns in a large saucepan, cover with water and a lid.
  2. Bring to the boil and simmer gently for 30 minutes.
  3. Add the rice, replace lid and simmer for a further 30 minutes.
  4. Remove the bone and drain the rice, reserving any broth.
  5. Remove any ham from the bone, chop and stir into the rice.

To serve

  1. Serve with the broth alongside.

Tips

  • Use French Camargue Red Rice, Sri Lankan Red Rice or Medium Grain Brown Rice
  • Stir in pineapple pieces and chopped coriander

  • 1 leftover 100% New Zealand ham bone
  • 3 bay leaves
  • 2 gloves garlic, peeled and finely chopped
  • 1 medium onion, peeled and diced
  • 4 whole cloves
  • 4 peppercorns
  • 1 cup red rice
