Quick, easy and a great idea for lunch!

Method

  1. Heat oil in a heavy-based fry pan and sauté the garlic and onion.
  2. Add the bacon pieces and stir fry until bacon just cooked.
  3. Add the rice and stir fry until rice is coated.
  4. Slowly stir in the stock and continue to stir until rice mix comes to a simmer.
  5. Lower the heat to minimum heat, cover and simmer until all stock absorbed (approx 10-15 minutes).
  6. Remove from the heat and stir in the parsley.
Hints
 
  • Shoulder bacon is also great in risottos
  • Always look for the 100% New Zealand Bacon label

Ingredients

  • 2 tablespoons canola oil
  • 2 cloves garlic, peeled and finely chopped
  • 1 medium onion, peeled and finely chopped
  • 500g 100% New Zealand Streaky bacon, rind removed and chopped
  • 2 cups Arborio rice
  • 3 cups vegetable or chicken stock (or water)
  • 2 tablespoons chopped parsley
