Method

  1. Heat the oil in frying pan and stir fry the onion and garlic for 5 minutes.
  2. Add the pork mince, chilli and cumin and stir fry until the mince changes colour and is cooked through.
  3. Stir in the tomato paste, beans and water and simmer gently for 10 minutes.

To serve

  1. Spoon into warmed taco shells with your favourite additions.

Hints/Tips

  • Warm taco shells in microwave oven for one minute or on oven tray in warm oven for five minutes
  • Great additions: grated cheese, bacon bits, chopped tomatoes, red onion slices, grated carrot, shredded lettuce, natural yoghurt, sour cream, mashed avocado

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, peeled and diced
  • 2 cloves garlic, peeled and finely chopped
  • 500g 100% New Zealand Pork mince
  • 1 teaspoon minced chilli
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 2 tablespoons tomato paste
  • 1 x 400g can mixed beans in brine, drained
  • 1/2 cup water
