Method

  1. Preheat oven to 165°C.
  2. Weigh the pork and calculate the cooking time - allow 25-30 minutes per 500 grams plus 20 minutes.
  3. Mix all the seasoning ingredients together.
  4. Butterfly the pork or cut a large cavity through the middle. Fill with the seasoning mixture, tie the pork if necessary.
  5. Place the pork in a baking dish and cook until the juices run clear.

To butterfly pork, slice the pork lengthwise almost through - then open like a book.

Pork Loin

  • 750 grams - 1 kilogram NZ Pork loin

Macadamia Seasoning

  • 10 dried apricots, chopped
  • 1 cup fresh breadcrumbs
  • 100 grams macadamia nuts, chopped
  • 1 egg, beaten
