For that summer island-time feeling; and perfect for cocktail party or pre-dinner nibbles!

Method

  1. Preheat oven to 165°C.
  2. In a bowl and with clean hands, mix everything together except coconut.
  3. Shape into balls.
  4. Spread the coconut thread on a dinner plate.
  5. Rolls the balls in the coconut.
  6. Place on baking paper on an oven tray and bake in preheated oven for 10-15 minutes until cooked.
  7. Place a toothpick in each ball for easy handling.

To serve

  1. Serve with a dipping sauce.

Terrific Tips

  • Try sweet chilli sauce thinned down with the juice from the lemon or pineapple or
  • Use a prepared satay sauce or see recipe below

Easy Satay Sauce
Ingredients
1/2 cup crunchy peanut butter
1/2 cup lite coconut cream
2 tablespoons sweet chilli sauce

Method
Combine all ingredients together in small saucepan
Bring to boil, stirring continuously and simmer until liquid reduces and thickens

Ingredients

  • 500g Trim Pork mince
  • 1/2 cup grated Edam cheese or 1/2 cup drained crushed pineapple
  • 2 tablespoons sweet chilli sauce
  • 2 tablespoons chopped fresh herbs
  • 2 tablespoons lemon zest
  • Salt and freshly ground black pepper
  • 1/2 cup coconut thread for rolling
