Method

  1. Mix the pork, ginger, coriander, oyster sauce, hoisin sauce and rice vinegar together.
  2. Place on a wonton wrapper and fold in a triangle.
  3. Saute the vegetables in a pot, add stock, water, then soy sauce and coriander powder.
  4. Boil 5 minutes then poach wontons for 3-4 minutes.

To serve

Place the wontons in a soup plate add the stock with vegetables.

Ingredients

Soup:

  • 30ml olive oil
  • 100g celery
  • 100g red capsicum
  • 100g spring onion
  • 1 L reduced salt beef stock
  • 1 L water
  • 30ml reduced salt soy sauce
  • 20g coriander powder
  • Pepper

Wontons

  • 400g Trim Pork mince
  • 1 tablespoon grated fresh ginger
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoi sin sauce
  • 1 tablespoon rice vinegar
  • 1 pkt wonton wrappers
