Namibian slow cooked stew, Potjie is usually done over coals.  The Slow Cooker works equally well producing a great one-pot dish for sharing. 

Method

  1. Heat oil in heavy-based fry pan or wok and stir fry onion, pepperdew or capsicum and pork until onion transparent.
  2. Transfer to slow cooker and stir in saffron, bay leaves, rice and water.
  3. Cover and cook on high until water absorbed by rice (approx. 3 hours).
  4. Stir in peas and lemon and cook on high until peas heated through.

Terrific Tips

  • Smoked pork fillet is ideal - but addition of smoked ham or bacon pieces also adds delicious flavour.
  • Replace the peas with small spinach leaves.

Ingredients

  • 2 tablespoons canola oil
  • 1 large onion, peeled and diced
  • 4 pepperdews or 1 red capsicum, deseeded and diced
  • 500g 100% New Zeland Pork, diced
  • 2 carrots, peeled and diced
  • 10 saffron threads
  • 5 bay leaves
  • 250g long grain rice
  • 5 cups water or vegetable stock
  • 1/2 cup frozen peas
  • Zest and juice of 1 lemon
