Method

  1. Slice the pork schnitzel into thin strips.
  2. Heat a little oil in a pan, add the pork and brown. Remove. Add the onion and garlic to the pan and cook for 2 minutes.
  3. Add the raisins, almonds, mint, lemon juice, cream and pepper to the pan. Stir and heat through. Add the mixture to the pork.  Cool.
  4. Preheat the oven to 200°C. Spray 2 layers of filo with oil spray and fold in half.
  5. Place 2 tablespoons of the mixture on one end of the pastry. Roll into a parcel, tucking the ends under.
  6. Place on an oil-sprayed oven tray. Cook for about 15 minutes until golden.

Ingredients

  • 600 grams NZ Pork schnitzel
  • Oil spray
  • 1 large onion, diced
  • 1 teaspoon crushed garlic
  • 100 grams sticky raisins
  • 70 grams flaked almonds
  • 1 tablespoon chopped fresh mint
  • juice of 1 lemon
  • 2 tablespoons cream
  • Freshly ground black pepper
  • 1 packet filo pastry
