Method

  1. Brown pork, add green curry paste and cook for another 5 minutes.
  2. Add snow peas and pepper and cook for 2-3 minutes.
  3. Reduce heat. Stir in coconut flavoured evaporated milk and heat through (1-2 minutes).
  4. Serve with steamed jasmine rice.

Ingredients

  • 300 g Trim Pork Leg Schnitzel, sliced into strips
  • 1 can (410 g) cocconut flavoured low fat evaporated milk
  • 2 tablespoons Thai Green Curry paste
  • ΒΌ cup snow peas, cut in half or 2 courgettes, sliced
  • 1 red pepper, cut in strips
