Method

  1. Put pork schnitzel on a flat surface and sprinkle a little sage over each schnitzel.
  2. Place 2 or 3 slices of prosciutto on top of each schnitzel and press down firmly. Secure with toothpicks. Coat each piece evenly with flour.
  3. Heat the first measure of butter in a large frypan, add pork and cook over a moderately high heat for 2-3 minutes on each side,or until golden-brown.
  4. Remove pork, place on a serving dish and keep warm. Add wine or lemon juice to pan and cook, stirring, for 1 minute. Stir in butter.
  5. Pour sauce over pork and serve immediately.

  • 4 pieces Trim Pork schnitzel
  • dried sage
  • 8-12 slices prosciutto (Parma ham)
  • flour
  • 2 tablespoons butter
  • 2 tablespoons dry white wine or lemon juice
  • 1 tablespoon butter
