Method

  1. Preheat the oven to 170°C.
  2. Whisk eggs, milk and sour cream together, then season to taste and leave to one side.
  3. Line baking dishes with 8 layers of filo pastry brushed with oil.
  4. Mix the spinach, bacon and parsley together then divide this mixture amongst the baking dishes.
  5. Pour over the egg mixture.
  6. Place in oven and cook until the egg mixture is firm to the touch. Remove from the oven.
  7. Cover the top with 8 layers of filo pastry brushed lightly with melted butter. Return to the oven.
  8. Bake until the filo turns golden brown.
  9. Remove from the oven and cool for approx. 5 minutes.

To serve

Serve with a crisp green salad.

Ingredients

  • 4 eggs
  • 1 cup milk
  • 50 grams sour cream
  • fresh ground black pepper to taste
  • 200 grams filo pastry
  • oil as needed
  • 200 grams spinach - stalks removed, blanched, drained & squeezed
  • 100 grams bacon, finely diced & cooked
  • 1 tablespoon chopped fresh parsley
