Method

  1. Heat a pan and cook the bacon until crisp.
  2. Remove the bacon from the pan and place on absorbent paper.
  3. Heat a little oil in a pan and quickly stir-fry the scallops.
  4. Arrange the salad greens, avocados and strawberries on plates and top with the bacon and scallops.
  5. Sprinkle the vinaigrette over the top and garnish with fried spaghetti sticks (refer below).

Fried spaghetti sticks are particularly effective as a garnish and are easy to make. Break lengths of spaghetti and fry them in oil until golden.

Ingredients

  • 4 rashers middle bacon
  • oil
  • 12-20 scallops
  • 4 cups salad greens
  • 2 avocados, cut into strips
  • 4-8 strawberries
  • vinaigrette dressing
