Method

  1. Heat a heavy-based fry pan and cook the bacon until crisp.
  2. Prepare the mustard mayo by mixing all ingredients together in a bowl.
  3. Spread mustard mayo on each slice of bread.
  4. Add tomatoes, salad greens and bacon to flour slices of bread.
  5. Add an extra dollop of mayo and top with remaining slice of bread.
  6. Devour.

Hints/Tips

  • For an easier mustard mayo simply stir wholegrain mustard into prepared mayonnaise.
  • Streaky bacon, cut into bite-sized pieces also goes well in a butty.

Ingredients

  • 4 rashers middle bacon, cut in half
  • 8 slices thick cut fresh white bread
  • 2 tomatoes, sliced
  • Bunch fresh small sald greens - such as rocket, baby spinach and cres

For the mustard mayo

  • 1/2 cup thick natural or Greek-style yoghurt
  • 1 tablespoon wholegrain mustard
  • squeeze of lemon juice (1 teaspoon)
  • salt and freshly ground black pepper (to taste)
