Serves 4 for a meal or 8 as pass arounds

Method

  1. Stir fry the bacon in a heated heavy-based fry pan until crispy then set aside.
  2. Heat the oil and sauté the onion, mushrooms and sage until mushrooms just cooked.
  3. Season with freshly ground black pepper.
  4. Return the bacon and stir in the sour cream.
  5. Pile in to bread baskets and serve with a sage leaf garnish.
 
For the bread baskets
  1. Heat an oven to 200°C.
  2. Spray large muffin trays with canola oil.
  3. Cut bread slices to round shape and press in to muffin trays.
  4. Spray with canola oil and place in oven until browned and crisp.
  5. If you have a second muffin tray of same size insert it above the bread to help keep it’s shape.
Hints Tips
  • Streaky Bacon is also suitable for this recipe.
  • Replace the bread baskets with rounds of flaky-puff pastry.
  • Including bacon in a recipe eliminates the need to add salt.

Ingredients

  • 500g Shoulder Bacon, cut into 3 cm squares
  • 1 tablespoon canola oil
  • 1 medium onion, peeled and diced
  • 2 cups small button mushrooms, sliced
  • 1 tablespoon fresh sage, finely chopped
  • Freshly ground black pepper
  • 1/2 cup sour cream
 
Bread Baskets
  • 8 slices of thinly sliced bread
  • canola oil spray
