A great way to start a weekend morning!

Method

1. Heat a non-stick frying pan and fry bacon rashers until golden and cooked.
2. Blanch the spinach in boiling water and drain.
3. Poach the eggs in gently simmering salted water until whites set.
4. Cut the English muffins in half and toast.
5. Butter the toasted muffins and top with spinach, bacon and eggs.
6. Add a dollop of Hollandaise sauce and sprinkle with pepper.
 
Hints /Tips
  • For a quick and easy Hollandaise sauce process together in a food processor – 2 tablespoons lemon juice with 4 egg yolks, then whilst still processing slowly pour in 200g melted butter.
  • An alternative to Hollandaise sauce is mayonnaise stirred with lemon juice.
  • Middle Bacon is also great with Eggs Benedict

  • 500g Middle Eye bacon rashers
  • 1 cup baby spinach leaves
  • 4 eggs
  • 4 English muffins
  • 2 tablespoons butter
  • 1/2 cup prepared Hollandaise sauce
  • Freshly ground black pepper
