A tasty and simple brunch dish.

Method

  1. Cut the bacon into 1.5cm pieces.
  2. Melt the butter in a heavy based frypan and stir fry the bacon.
  3. Whisk the eggs with a fork and pour over the bacon in the pan.
  4. When the mixture is beginning to firm, sprinkle over the tomatoes and herbs.
  5. Using a spatula, ease around the edges and fold in half.
  6. When brown underneath, remove from heat and slide onto plate.

To serve

  1. Serve with fried brown mushrooms.

Hints/Tips

  • Add some grated cheddar cheese with the tomatoes.

Ingredients

  • 2 rashers of rindless bacon
  • 1 knob butter
  • 3 large eggs - No 7
  • 2 medium tomatoes, deseeded and diced
  • 2 tablespoons chopped fresh herbs such as parsley and chives.
