Method

  1. Heat one tablespoon butter in a heavy-based fry pan.
  2. Cut the bacon into 3cm squares and stir fry one minute.
  3. Whisk the eggs, cream and salt together and pour over the bacon.
  4. Sprinkle over the basil leaves.
  5. Leave for 20 seconds before bringing the egg mix to the middle of the fry pan with a wooden spoon.
  6. Leave 20 seconds before bringing in edges of the scrambled eggs.
  7. Leave a furher 20 seconds and repeat once more.

To serve

  1. Sprinkle with cracked pepper and serve on hot buttered toast.

Hint/Tips

  • The flavour of shoulder bacon is great, but any bacon can be used.
  • Try grating in some feta with the basil leaves.

  • 2 rashers of rindless New Zealand bacon
  • 4 eggs
  • 1/2 cup cream
  • Salt and pepper to taste
  • 1/4 cup small basil leaves
  • 1 tablespoon butter
