Delicious and perfect as a starter.

Method

  1. Drain the scallops and pat dry. Season.
  2. Slice the peaches. Cut the bacon into strips long enough to wrap a slice of peach and a scallop together.  Thread onto little skewers or cocktail sticks.
  3. Place under a preheated grill for about 5 minutes, turning occasionally and brushing with oil.

To serve

Serves 6 as an appetiser.

The sweet and savoury mix of flavours of these skweres is perfect for Lawson's Gewurztraminer as the fruity richness of the wine matches the sweet peach and savoury bacon, while the scallop flavours are nestled between the two.

Ingredients

  • 24 scallops
  • salt and  pepper to taste
  • 2-3 ripe but firm peaches, stoned and peeled
  • 4 rashers 100% New Zealand streaky rindless bacon
  • 3-4 tablespoons olive oil
