Method

Spareribs can be cut into individual ribs or cooked in racks of 4 ribs. For mini-ribs, cut the spareribs in half horizontally, then cut into individual ribs.

  1. Preheat the oven to 180°C.
  2. Place the pork spareribs in a baking dish and glaze them with your chosen sauce.
  3. Bake for approximately 1 hour, turning and brushing with the sauce mixture during cooking.

Ingredients

Spareribs:

  • 1.5 kilograms spareribs
  • 3/4 cup sauce

Chilli Plum Sauce (makes about 3/4 cup)

  • 1/2 cup plum sauce
  • 1/4 cup olive oil
  • 1-2 teaspoons minced chilli
  • 1-2 cloves garlic, crushed
  • 1-2 teaspoons minced ginger

Mix all the ingredients together.

Apricot and Ginger Sauce (makes about 3/4 cup)

  • 1/2 cup apricot jam
  • 1-2 tablespoons soy sauce
  • 2 tablespoons lemon juice
  • 1-2 teaspoons minced ginger

Mix all the ingredients together.

Maple and Garlic Sauce (makes about 3/4 cup)

  • 1/2 cup maple syrup
  • 1/4 cup tomato sauce
  • 1-2 cloves garlic, crushed

Mix all the ingredients together.

Moroccan Magic Sauce (makes about 3/4 cup)

  • 1/2 cup liquid honey
  • 2 tablespoons tomato sauce
  • 2 tablespoons dukkah

Heat the honey and add the tomato sauce and dukkah.
