Method

  1. Place all the ingredients together in a saucepan, mix well and bring to boil.
  2. Simmer for 15 minutes.
  3. Allow to cool, cover and keep in refrigerator until required.
  4. BBQ or grill the spare ribs on medium heat, basting with the remaining sauce.
  5. Serve in individual bowls with a napkin and finger bowl!

To serve

  1. Separate the spare ribs into portions, individual ribs or leave in whole pieces for serving as a main meal.
  2. Spare ribs can also be cooked in a single layer in an oven pre-heated to 180°C for one hour basting occasionally with a glaze such as Chinese Plum or Spicy Apricot Sauce.

Ingredients

  • 1 kg pork spare ribs
  • 2 tablespoons each grated fresh root ginger, peeled and diced onion, tomato paste
  • 2 cloves garlic, peeled and chopped
  • 1 chilli, deseeded and chopped
  • 1/4 cup sweet soy sauce (kecap manis)
  • Juice and zest from 1 small orange
  • 1 cup water
