Method

  1. Place the ribs in shallow dishes.
  2. Combine plum jam, minced chilli and wine vinegar and brush over all surfaces of the ribs.
  3. Cover and place in refrigerator to marinate.
  4. Place ribs in oven pre-heated to 180ºC and cook for 1 - 1¼ hours or until cooked, basting occasionally.

Ingredients

  • 4 kg whole ribs, cut into 4 or 5
  • 1 kg plum jam
  • 100 g minced chilli
  • 100 ml wine vinegar
