Method

  1. Brown the chops in a little oil & place in a baking dish.
  2. Heat the remaining oil in a pan, add the garlic and onion & cook for 2 to 3 minutes.
  3. Add the canned tomatoes.
  4. Add the courgette, oregano, basil, pepper & green pepper.
  5. Pour the tomato mixture over the chops.
  6. Bake in preheated oven at 180°C for 3/4 to 1 hour.

Ingredients

  • 10 pork chops
  • 30 ml oil
  • 2 cloves garlic, crushed
  • 100 g onions, chopped
  • 1 kg canned tomatoes in juice
  • 100 g courgettes, sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 1 green pepper, sliced
  • Thyme - to garnish as desired
