Method

Herb Marinade:

  1. Mix all the ingredients together in a small bowl and marinate pork chops 1 - 6 hours.

Pork Chops:

  1. Pre-heat the oven to 160ÂșC.
  2. Cut the pears into quarters and remove the cores.
  3. Place the pork chops, marinade, kumara and pears in a roasting tray and season.
  4. Place into the oven and cook for 35 minutes.
  5. Add the cherry tomatoes and gently mix to incorporate. Cook a further 10 - 20 minutes or until chops are cooked.

Ingredients

Herb Marinade:

  • 4 large sprigs of rosemary pounded
  • 2 garlic cloves, crushed
  • 200 ml olive oil
  • 3 lemons, juiced
  • Freshly ground black pepper

Pork Chops:

  • 4 pork chops, marinated
  • Kumara, scrubbed and sliced
  • 2 pears, quartered and cored
  • Salt and freshly ground black pepper
  • 1 punnet cherry tomatoes
