A family favourite meal for the Russells.

Method

  1. Pre heat oven to 165°C.
  2. Trim the chops.
  3. Place the flour, salt and pepper on a flat plate and coat the chops on both sides.
  4. Heat a large heavy-based fry pan and add the oil or butter.
  5. Brown the chops on both sides.
  6. Transfer to a lidded casserole dish.
  7. Combine the sugar, ginger, orange rind and juice and pour over the chops.
  8. Cover and bake for 45 minutes.
  9. Add orange segments and bake a further 10 minutes.

To serve

  1. Serve with mashed potatoes and green beans.

Ingredients

  • 4 100% New Zealand Pork Loin Chops
  • 2 tablespoons flour
  • Salt and pepper to taste
  • 1 tablespoon oil or butter
  • 1 tablespoon brown sugar
  • 1/4 teaspoon ground ginger
  • Grated rind and juice of 3 oranges (1/2 cup juice)
  • Orange segments
