Method

  1. Mix the spinach, pinenuts, breadcrumbs and egg together.
  2. Push a steel through the pork fillet and pipe the seasoning through.
  3. Preheat the oven to 170°C.
  4. Place the pork in a baking dish and cook for 35-40 minutes until the pork is cooked. The juices will run clear when the pork is gently pierced with a knife.

Variation

  1. Wrap the pork fillet in streaky bacon before roasting.

  • 1 small bunch spinach, blanched, drained and chopped
  • 1/4 cup pinenuts
  • 1 cup fresh breadcrumbs
  • 1 egg, beaten
  • 2 pork fillets
