Method

  1. Beat and roll the trim pork fillet until it is the size of a schnitzel.
  2. Top with ham slices, drained pineapple and mozzarella cheese.
  3. Roll up, dip in egg and breadcrumbs.
  4. Place in hot heavy pan and pan-fry until cooked.
  5. Whilst cooking, puree the can of plums and remaining pineapple juice and bring to boil.
  6. Tighten up with cornflour, stirred into cold water to make paste.
  7. Place half the the plum mix onto warmed plate.
  8. Diagonally slice the pork fillet and place on plum.
  9. Spoon over remaining plum and serve with a green salad or braised green vege
  10. Delicious and the neighbours will be impressed too.

Ingredients

  • 2 whole trim pork fillets
  • 4 slices of lean (97% fat free) ham
  • 1 can pineapple pieces in juice
  • 1 cup grated mozzarella cheese
  • 1 egg, beaten
  • ½ cup bread crumbs
  • 1 can dark plums
  • 1 tablespoon cornflour
