Method

  1. Preheat oven to 170°C.
  2. Slit whole fillets along one side and stuff with prunes and sage leaves.
  3. Wrap with streaky bacon, securing with toothpick.
  4. Place on baking tray lined with baking paper and bake in preheated oven for 25-30 minutes.  If using a roast pork thermometer the internal temperature should be 71°C.

To serve

Allow to rest for 5 minutes and serve sliced diagonally or left whole with roasted potatoes or mashed kumara and steamed whole green beans.

  • 500g Whole New Zealand pork fillet or tenderloin
  • 12 dried prunes
  • 6 sage leaves
  • 8 rashers of New Zealand streaky bacon
