Method

  1. Carefully run your fingers under the skin of the ham and lift it away.  Place ham on a rack in a foil-lined baking tray.  Using a sharpe knife, cut ham fat layer into a diamond pattern.
  2. Mix together the brown honey and half of the wasabi (2 tablespoons)
  3. Finely chop half of the pickled ginger (2 tablespoons) and stir into the honey and wasabi mixture.
  4. Brush over the ham.
  5. To glaze and serve cold - bake in a pre-heated oven at 180oC for 35-40 minutes.
  6. Cool, cover loosely and store in refrigerator until served.
  7. To glaze and serve hot - bake in pre-heated oven at 160oC, allowing 20 minutes per kilogram.
  8. After glazing decorate with remaining pickled ginger.

To serve

Serve with wasabi paste, a crisp salad and fresh bread rolls.

Ingredients

  • 100% New Zealand Cooked Half Ham on the Bone
  • 1/2 cup liquid honey
  • 1/4 cup wasabi paste
  • 1/4 cup of pickled ginger (available at most supermarkets and Asian stores)
