Method

  1. Cook macaroni in boiling water for 10 minutes or until tender but still firm. Rinse and drain well.
  2. Heat olive oil and fry onion and garlic until onion is soft. Add tomatoes, juice, tomato paste, red and green pepper, ham, olives and black pepper and simmer for 5 minutes.
  3. Stir in cooked macaroni and pour into shallow baking dishes.
  4. Cover with the sliced cheese and bake in a preheated oven at 180°C for 20 minutes or until cheese melts.
  5. Serve immediately .

Ingredients

  • 200 g small macaroni
  • 30 ml olive oil
  • 1 teaspoon crushed garlic
  • 200 g onion, peeled and chopped
  • 1.6 kg canned plum tomatoes in juice, drained and chopped
  • 500 ml juice from drained tomatoes
  • 2 tablespoons tomato paste
  • 300 g red pepper, seeded and chopped
  • 300 g green pepper, seeded and chopped
  • 600 g lean ham, diced
  • 2 tablespoons black olives, stoned and halved
  • freshly ground black pepper
  • 300 g mozzarella cheese, thinly sliced
