Redcurrant Sauce

Makes about 1 ¼ cups

Ingredients

  • 1 cup redcurrant jam
  • ¼ cup orange juice
  • 2 tablespoons mint leaves, chopped

Method

Sparkle

Place jam in a small saucepan and melt over low heat.

Remove from the heat and stir in orange juice and mint. Serve with roast pork.

Port and raspberry sauce

Makes about 1 ¼ cups

  • ½ cup redcurrant jam
  • ¼ cup port
  • 2 teaspoons lemon juic
  • e
  • 250g raspberries (thawed and drained if using frozen)
  • 1 tablespoon cornflour
  • Black pepper, to taste

Method

Sparkle

Place jam, port and lemon juice in a saucepan. Heat and stir until the jam melts.

Puree the raspberries and add to the jam mixture.

Mix the cornflour with a little water then add to the sauce stirring until thick

.

Season to taste. Serve with roast pork.

Apple sauce

Makes about 1 ¼ cups

Ingredients

  • 4 large apples
  • 2 tablespoons lemon juice
  • 1 ½ tablespoons caster sugar

Method

Sparkle

Peel, core and chop the apples. Combine the apples with lemon juice and 2 tablespoons of water in a saucepan.

Bring to the boil over medium to high heat. Reduce heat to medium, cover and cook for 15 minutes, or until apples are soft. Stir in sugar, and allow to cool.

Transfer mixture to a food processer and puree until smooth. Serve warm or cold.
