Mediterranean Style Pork

Ingredients
4x NZ pork sirloin steaks
4 garlic cloves, diced
2 tbsp olive oil
½ cup green olives, pitted
2 tbsp capers
1 large carrot, diced
1 celery stalk, diced
1 large onion, diced
2 red capsicums, roasted with skin and seeds removed
2 cups chicken stock
400g tin chopped tomatoes
1 cup red wine
1 tbsp smoked paprika
Method
Season pork with salt and pepper on both sides. Heat a little olive oil in a fry pan and fry the pork steaks for 2 minutes on each side. Remove the pork from the pan and set aside.
Add the carrot, celery, garlic and onion to the pan and sauté for 5-6 minutes until golden and fragrant. Stir through the smoked paprika and cook for a further 3 minutes.
Pour in the red wine and reduce until evaporated before adding the remaining ingredients. Bring the mixture to a simmer and add the pork steaks back to the pan. Cook for 20 minutes on low.
Sprinkle with freshly chopped parsley to serve.
