To BBQ your pork chops, simply heat your grill to a medium-high heat, brush with oil, and cook on both sides for 5 minutes each. To keep your pork tender and juicy, rest it off-heat for 2 minutes, covered loosely with foil.

Italian-style Grilled NZ Pork Chops

4 NZ Pork Chops 1cm thick
Oil for grilling
1 teaspoon fresh basil leaves, finely chopped
½ teaspoon fresh oregano, finely chopped
2 teaspoons fresh parsley, finely chopped
Rind of 1 lemon
3 cloves garlic, finely chopped
2 teaspoons sundried tomatoes, finely chopped
4 tablespoons of extra virgin olive oil
Salt and pepper to taste
Parmesan cheese to garnish

Mix the basil, oregano, parsley, lemon rind, garlic, sundried tomatoes and olive oil in a food processor or mortar and pestle.

Coat the pork in the herb paste and marinate for 20 minutes.

Heat the BBQ to medium to high heat, brush with oil and grill the chops for 5 minutes on either side.

Rest for 2 minutes off the heat, and serve.

Caprese Style Pork Chops

100ml extra virgin olive oil
1 bunch chervil
2 sprigs oregano
2 garlic cloves, minced
50ml balsamic vinegar
250g buffalo mozzarella, cut into eighths
8 medium tomatoes, roughly chopped
8 basil leaves

For the Caprese salad, mix chervil, oregano, garlic, balsamic, tomatoes and mozzarella with olive oil and set aside.

On a tray, oil and season the pork chop with salt and pepper and grill on medium-high heat for 5 minutes either side.

Rest for 2 minutes off the heat, and serve with salad.

Pork Chops on Green Beans

8 NZ Pork chops
½ cup parsley, chopped
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon rosemary, chopped
1 tablespoon orange peel, grated
1 tablespoon lemon peel, grated
1 teaspoon sugar
½ teaspoon dried oregano
½ teaspoon pepper
½ teaspoon salt
400g green beans, quickly pan fried in 1 tablespoon of butter

Mix the parsley, garlic, oil, rosemary, orange and lemon peel, sugar, oregano, salt and pepper, and spread over each chop. Marinate in the fridge overnight or for 2 hours.

Remove excess marinade, and grill chops on medium to high heat for 5 minutes on either side.

Rest for 2 minutes off the heat, and serve with green beans.
