Barbecued Maple Pork Steaks with Vegetables

These sticky New Zealand pork steaks with a medley of veges will be a sure-fire family favourite!

4 New Zealand pork sirloin steaks

Marinade

1 garlic clove, crushed

2 Tbsp canola oil

1 Tbsp honey

3 Tbsp maple syrup

1 tsp ground paprika

¼ tsp ground cinnamon

1 tsp salt

Ground black pepper

Vegetables

2 corn cobs

Butter

200g Swiss Brown mushrooms

Red, green, yellow, orange capsicum, quartered

2 small aubergines, halved

Marinade the pork steaks

Combine the garlic, honey, maple syrup, paprika, cinnamon, salt, black pepper, and oil. Coat the pork in this mixture and leave to marinate for at least 10 mins.

Cook the corn/heat the barbecue

Microwave the corn cobs for 4 mins. Coat generously with butter.

Meanwhile, heat the barbecue on high.

Prepare the vegetables

Toss the mushrooms, capsicum, and aubergines in oil before adding to the barbecue along with the corn.

Cook the pork steaks

Cook the pork steaks using the 6+2+2 method - on the grill plate for 6 mins on one side, then turn over to cook for another 2 mins. Remove from the heat and allow to rest for 2 mins.

Serve with the vegetables.

Air frying method

Preheat air fryer to 200°C. Spray air fryer tray with cooking oil, or use baking paper if desired.

Cook for 12 minutes, and flip after 6 minutes. Rest for 2 mins before serving.
