How to stir frying

Prepare the meat

Slice your meat across the grain. Toss in oil and season.

Prepare the pan

Heat the wok or pan to a high heat.

Cook

Cook the meat in small batches. Remove each batch of meat from the pan once cooked.

Add cooked vegetables

Cook your chosen vegetables then return all the meat to the pan and toss through with any sauces you like.

Tips and tricks

Chop before you start

Have all your ingredients chopped prior to commencing cooking

Keep consistency in size

Ensure all ingredients are roughly equal in size to ensure cooking is even

Order your ingredients by cooking time

Add the ingredients that take longer to cook first such as onions, celery and carrots

When it comes to stir-frying New Zealand pork strips, diced pork or mince the best method is cooking at a high heat for 2-3 minutes until light brown.
