Reheat the roast potatoes in the air fryer or microwave.
Reheat the gravy in a small saucepan.
Meanwhile, heat a non-stick fry pan on medium high and drizzle with a little oil. Add the ham and cook for 5 mins.
Scatter the ham over the potatoes, then top with mozzarella and hot gravy. Garnish with parsley.
