Pork Meatballs with Chinese Noodle Soup

700g New Zealand pork mince

1 garlic clove, crushed

1cm ginger, finely diced (or ½ tsp ground ginger)

½ tsp white pepper

3 Tbsp soy sauce

1 tsp sesame oil

Finely chopped coriander (optional)

3 blocks of egg noodles (from a pack of 4 - roughly 70gm each block)

Shanghai bok choy, quartered

Make the meatballs

Combine the pork mince, garlic, ginger, white pepper, soy sauce, and sesame oil together. Form the mixture into meatballs.

Cook the noodles

Meanwhile, in a saucepan of salted boiling water, cook the egg noodles according to the packet instructions. Drain, toss with a little canola oil and set aside.

Cook the meatballs

In another saucepan of lightly salted boiling water, cook the meatballs for 7-8 mins, or until cooked through. In the last 2 mins, add the bok choy to the broth.

Serving

Serve the meatballs, broth, and bok choy with the noodles.
