Pork Mince Loaded Kūmara

200g pork mince

  • 2 medium kumara/sweet potatoes (orange or purple)
  • 200g pork mince
  • 200ml tomato passata
  • 1 tsp olive oil
  • 1 clove garlic, minced
  • 1⁄2 onion, diced
  • Salt & pepper
  • 100g cottage cheese
  • 1⁄4 red onion, diced
  • 1 tomato, diced
  • 1⁄4 avocado, diced
  • 1 tsp apple cider vinegar
  • Fresh coriander

  • 1⁄4 red onion, diced
  • 1 tomato, diced
  • 1⁄4 avocado, diced
  • 1 tsp apple cider vinegar

  1. Pierce sweet potatoes with a fork and microwave for 5-10 minutes until soft
  2. Heat olive oil in a pan, cook onion and garlic until soft.
  3. Add pork mince, cook until browned. Season with salt and pepper.
  4. Stir in passata and simmer for 5-10 minutes until slightly thickened.
  5. Slice open sweet potatoes and fluff the inside.
  6. Spoon in the pork bolognese, then top with cottage cheese.
  7. Add salsa, red onion, tomato, avocado and fresh coriander.
