Easy Peasy Pancakes

The kids will love to get involved in cooking these amazing pancakes served with maple syrup and crispy New Zealand bacon.

200g New Zealand Streaky Bacon

2 cups self-raising flour

50g butter, melted

1 ½ cups milk

2 eggs plus 2 egg whites, beaten until stiff

1/2 cup sugar

1 tsp vanilla essence

Butter or oil for frying

To Garnish

Fresh berries if available

Combine pancake mixture

Place the flour and sugar in a large bowl and set aside.

In a separate bowl, mix together milk and 2 whole eggs, before pouring over flour mixture. Stir to combine.

Melt butter and vanilla

Then carefully fold through the 2 beaten egg whites until the mixture is combined and fluffy.

Cook the pancakes

Heat a small amount of butter or oil in a pan and cook pancakes slowly for 3-4 minutes on each side.

The mixture should make 8 pancakes

Fry the bacon

While the pancakes cook, fry the streaky NZ bacon in a pan or bake in the oven.

To serve

Serve pancakes with hot sizzling bacon, fresh berries and maple syrup.

Tip

No maple syrup? Drizzle with a little honey instead.
