NZ Pork Koftas

Ingredients

1 tbsp olive oil
1 onion, finely diced
1 garlic clove, crushed
½ tsp ground cumin
½ tsp allspice
1 tsp ground coriander
500g NZ pork mince
1 tbsp fresh mint, finely chopped

In a fry pan, heat oil over medium heat. Once hot, sauté onion, garlic and spices for 3-4 minutes.

Remove from the pan and cool mixture for 5 minutes.

In a bowl, add NZ pork mince, mint and onion mixture. Combine – mixing thoroughly – using your hands or large spoon.

Divide the mixture into 12 small logs (or 6 large ones). Pierce each Kofta with a pre-soaked kebab skewer.

Cook the Koftas on the barbeque, in a fry pan or in the oven (at 190℃) for about 10-15 minutes, turning once.

Serve with tzatziki and fresh wedges of lemon.
